Tuna and White Bean Salad

Ingredients

  • Dressing:
  • 3 tablespoons fresh lemon juice
  • 2 tablespoons extra virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground dry mustard
  • 1/4 teaspoon pepper
  • Salad:
  • 1 (15.5oz) can S&W® Cannellini Beans (drained, rinsed)
  • OR 1 (15.5oz) can S&W® White Beans (drained, rinsed)
  • 1 (2oz) jar diced pimiento (drained)
  • 1 medium cucumber, chopped (1 1/2 cups)
  • 1/4 large red onion, thinly sliced (1/2 cup)
  • 1/2 cup loosely packed fresh parsley, chopped
  • 3 (4.5oz) cans chunk light tuna in water (drained)

Directions

In large bowl, beat all dressing ingredients with wire whisk until well blended. Add all salad ingredients; toss to coat well.

Serving Suggestion: Serve this main dish salad with warm crusty bread for a light supper.
Also tastes great served on a bed of mixed greens.

Tip: You can use chunk albacore tuna for larger chunks. If you prefer, you can substitute 2 (5oz) pouches of plain tuna for the cans.
