Ingredients

  • 1 (8 to 10oz) bag washed salad greens
  • 1/3 cup light ranch dressing
  • 1/3 cup taco sauce
  • 1 (15oz) can S&W® Black Beans, Low Sodium (drained, rinsed)
  • 1 (15.25oz) can whole kernel corn (drained)
  • 2 (5oz) pouches chunk albacore or light tuna in water (drained)
  • 1 medium red bell pepper, cut in bite size strips

Ingredients

  • 1/3 cup taco sauce
  • 1 (15oz) can S&W® Black Beans, Low Sodium (drained, rinsed)
  • 1 (15.25oz) can whole kernel corn (drained)
  • 2 (5oz) pouches chunk albacore or light tuna in water (drained)
  • 1 medium red bell pepper, cut in bite size strips

Directions

Place greens in large bowl. In small bowl, mix dressing and taco sauce; pour over lettuce. Toss to coat. Add all remaining ingredients; toss to coat.

Tip: You can use your favorite kind of tuna. Albacore offers nice big chunks for a tossed salad. Chunk light tuna is much finer, and makes a nice tuna salad for sandwiches. But it would also work in this salad. You can substitute 2 or 3 cans of tuna for the pouches.

Serving Suggestion: If you are looking to make this simple recipe even easier, replace the can of corn and chopped peppers with a can of corn & peppers.
