  • 1 1/2 pounds boneless skinless chicken breasts, cubed
  • 2 tablespoons smoked paprika
  • 1 teaspoon salt
  • 1 small onion, chopped (about 1/2 cup)
  • 1 cup uncooked instant brown rice
  • 1 (15oz) can S&W® Pinquito Beans (do not drain)
  • 1 (15oz) can whole kernel corn (drained)
  • 1 (10oz) can reduced sodium cream of chicken soup
  • 1 cup milk
  • 1 cup (4oz) shredded reduced fat Cheddar cheese

Directions

Spray 3 1/2 to 4 1/2-quart slow cooker with cooking spray. Mix chicken, paprika and salt in slow cooker. Stir in all remaining ingredients until well mixed; cover. Cook on Low heat setting 5 to 6 hours or until chicken is tender and thoroughly cooked.

Tips: Any milk will work for this recipe. Whole milk or even half-and-half will produce a creamier outcome.

For a spicier flavor, substitute S&W® Jalapeno Black Beans for the S&W® Pinquito Beans.
