Ingredients

  • 2 cups uncooked long grain white rice
  • 4 cups water
  • 1 tablespoon butter
  • 1 tablespoon vegetable oil
  • 2 large onions, chopped (about 2 cups)
  • 4 large celery stalks, chopped (about 2 cups)
  • 1 medium green bell pepper, chopped (about 1 cup)
  • 1 large garlic clove, finely chopped
  • 2 tablespoons all-purpose flour
  • 1 teaspoon sugar
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1 bay leaf
  • 1 teaspoon hot pepper sauce or to taste
  • 1 (15oz) can tomato sauce
  • 1 (15.5oz) can S&W® Kidney Beans (drained, rinsed)
  • 3/4 cup chicken broth or water
  • 1 pound cooked deveined shelled large shrimp, tails removed

Directions

In 2 & 1/2-quart saucepan, cook rice in water as directed on package. Set aside to keep warm.

Meanwhile, in 12-inch nonstick skillet, heat butter and oil over medium heat. Add onions, celery, bell pepper and garlic. Cook 5 minutes or until tender, stirring occasionally. In small bowl, mix flour, sugar, paprika and salt. Sprinkle over vegetables and stir in. Stir in bay leaf, hot sauce, tomato sauce, beans and broth. Bring to a boil. Reduce heat; simmer 15 minutes or until slightly thickened, stirring occasionally. Stir in shrimp. Cook 5 minutes or until thoroughly heated. Remove bay leaf. Serve shrimp mixture over rice.
