Ingredients

  • 1 (15oz) can S&W® Jalapeño Black Beans with Lime Juice (do not drain)
  • 1 (15oz) can S&W® Pinto Beans (drained, rinsed)
  • 4 fully cooked bratwursts or sausages (9oz)
  • 1 (8.5oz) box corn muffin mix
  • Milk (as required for corn muffins)
  • Egg (as required for corn muffins)
  • 1 (15oz) can whole kernel corn (drained)

Ingredients

Directions

Heat oven to 400°F. Spray 13×9-inch baking dish with cooking spray. In dish, combine, black beans with sauce, pinto beans and sausages.

In medium bowl, prepare corn muffin mix using amount of milk and egg called for on box. Stir in corn. Drop scoops of corn muffin mixture over the beans. Bake 25 minutes or until corn muffin mixture is golden brown.

Tip: Try this recipe with breakfast sausage instead of bratwursts and serve for brunch.
