Ingredients

  • 3 strips applewood smoked bacon, chopped
  • 1/2 cup chopped red onion
  • 1 garlic clove, minced
  • 1 poblano chile, roasted and peeled if desired, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 2 tablespoons ketchup
  • 2 teaspoons brown sugar
  • 1 teaspoon chili powder
  • 2 (15oz) cans S&W® Pinquito Beans (do not drain)
  • 1/4 cup chopped cilantro

Ingredients

  • 3 strips applewood smoked bacon, chopped
  • 1/2 cup chopped red onion

  • 1 poblano chile, roasted and peeled if desired, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 yellow bell pepper, chopped
  • 2 tablespoons ketchup
  • 2 teaspoons brown sugar
  • 1 teaspoon chili powder
  • 2 (15oz) cans S&W® Pinquito Beans (do not drain)
  • 1/4 cup chopped cilantro

Directions

In large skillet, cook bacon over medium-high heat 5 minutes or until starting to crisp. Stir in onion. Cook and stir 3 minutes. Reduce heat to medium-low. Stir in garlic, poblano, red and yellow bell pepper. Cook 5 minutes or until tender, stirring occasionally. Stir in ketchup, brown sugar and chili powder. Cook 2 minutes. Stir in beans. Cook until bubbly and thoroughly heated. Remove from heat; stir in cilantro.

Tips: If your family isn’t a fan of cilantro, you can substitute chopped parsley for the cilantro.

For a vegetarian version, omit the bacon and cook the vegetables in 2 tablespoons of vegetable oil.
