Ingredients

  • 1 (15oz) can S&W® Southwest Style Savory Sides (do not drain)
  • 2 soft flour tortillas for tacos (6inch)
  • 1 tablespoon vegetable oil
  • 2 eggs
  • 2 tablespoons cotija cheese, crumbled
  • 2 tablespoons salsa

Directions

Pour beans in medium microwaveable bowl. Cover with waxed paper and microwave on High 1 minute or until thoroughly heated. Meanwhile, brush both sides of tortillas with 1 teaspoon of the oil. One at a time, cook in medium nonstick skillet over medium-high heat until browned on both sides. Place each on serving plate. Reduce heat to medium-low. Add remaining 2 teaspoons oil to skillet. Cook eggs until whites are set or to desired doneness. To cook tops of eggs, either turn over for “over easy” eggs or add 1 tablespoon of water to the eggs and cover skillet. Spoon 1/2 of the beans over each toasted tortilla. Top with egg, cheese and salsa.

Tips: You can use your favorite shredded cheese in place of the Mexican cotija cheese. Cook the eggs any way you like them – you can even scramble them if you prefer.
