Ingredients

  • 1 (15.25oz) can S&W® Kidney Beans (drained, rinsed)
  • 1 (14.5oz) can cut green beans (drained)
  • 1 (6.5oz) jar marinated quartered artichoke hearts (drained)
  • 2 cups cubed grilled chicken, thawed if frozen (10oz)
  • 1/2 large red bell pepper cut in thin bite-sized slivers (1/2 cup)
  • 1/4 cup chopped red onion
  • 1/3 cup regular or reduced-calorie Italian vinaigrette dressing
  • Romaine lettuce leaves

Ingredients

Directions

In large bowl, combine all ingredients except lettuce; toss to coat. Serve immediately or refrigerate several hours to overnight to chill and blend flavors. Line platter or bowl with romaine lettuce leaves. Spoon salad over lettuce.

Serving Suggestion: Garnish salad with Feta cheese or shredded Parmesan cheese.

Tip: You can purchase frozen grilled chicken cubes, or grill 2 chicken breasts, or use leftover grilled chicken in this salad.
