Spray 3 to 3 & 1/2-quart slow cooker with cooking spray. In 12-inch nonstick skillet, cook ground beef over medium-high heat 5 minutes or until thoroughly cooked. Stir in bell pepper; cook 3 minutes. Stir in all remaining ingredients except cheese. Remove from heat. Stir in cheese cubes. Spoon into slow cooker. Cover; cook over Low heat setting 1 & 1/2 to 2 hours or until thoroughly heated and cheese is melted. Stir. Keep warm up to 1 hour on Low heat setting, stirring occasionally.
Tip: For variety, use 1/2 red bell pepper and 1/2 green bell pepper.
