  • 1 medium orange or red sweet potato, peeled, cut in 1/2-inch cubes
  • 1 tablespoon vegetable oil
  • 1/2 cup slivered red onion
  • 1/2 large green bell pepper, cut in thin bite-sized slivers
  • 1 (15oz) can S&W® Indian Style Savory Sides (do not drain)
  • 1/2 teaspoon grated lime peel
  • 3 tablespoons lime juice

Ingredients

  • 1 medium orange or red sweet potato, peeled, cut in 1/2-inch cubes

Directions

In large nonstick skillet, cook potato in oil over medium-high heat 4 minutes or until lightly browned, stirring frequently. Stir in onion and bell pepper; cook 3 minutes, stirring frequently. Add 1 tablespoon water. Reduce heat to medium; cover and cook 3 minutes. Stir in garbanzo beans. Cover; cook 3 minutes or until vegetables are tender and mixture is thoroughly heated, stirring once. Stir in lime peel and juice.
