Heat oven to 375°F. Spray 1 1/2-quart casserole with cooking spray. In medium saucepan, cook rice in water as directed on package. Stir in chili beans and 1 cup of the cheese. Spoon into casserole. Top with remaining cheese. Bake uncovered 20 to 25 minutes or until bubbly around edges and thoroughly heated.
Serving Suggestion: Serve this Tex Mex side dish with pulled pork tacos or your favorite Mexican entree.
