Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium carrot, sliced (about 1/2 cup)
  • 1 small onion, chopped (about 1/2 cup)
  • 1 stalk celery, chopped (about 1/2 cup)
  • 1/2 medium green or red bell pepper, chopped (about 1/2 cup)
  • 1 (8oz) package small button mushrooms, quartered
  • (20oz) boneless, skinless chicken breasts, cubed
  • 2 teaspoons dried Italian seasoning
  • 1/2 cup all-purpose flour
  • 2 cups reduced-sodium fat-free chicken broth
  • 1 (15.5oz) can S&W® Pinto Beans (drained, rinsed)
  • 1 cup frozen peas
  • Pepper to taste
  • 1 (16.3oz) can reduced-fat refrigerated biscuits (8 biscuits)

Directions

Heat oven to 350°F. Spray 13×9-inch (3-quart) glass baking dish with cooking spray.

In 12-inch nonstick skillet, heat oil over medium heat. Add carrot, onion, celery, bell pepper and mushrooms. Cook 3 minutes or until slightly softened. Add chicken and Italian seasoning. Cook 5 to 7 minutes or until chicken is no longer pink in center, stirring frequently. Stir in flour until well mixed. Stir in broth; cook until mixture boils and thickens. Stir in beans and peas. Season to taste with pepper. Cook until bubbly and thoroughly heated. Pour into dish. Separate biscuits and place over chicken mixture. Bake 20 minutes or until biscuits are golden brown and no longer doughy on the bottom.

Serving Suggestion: Serve fresh fruit to round out this one dish meal.

Tip: Be sure that the chicken mixture is piping hot when you place the biscuits on top so the biscuits bake all the way through.
