Ingredients

  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon red wine vinegar
  • 1 tablespoon finely chopped chipotle chiles in adobo sauce
  • 1 teaspoon ground cumin
  • 1/4 cup chopped fresh cilantro
  • 2 (15oz) cans S&W® Black Beans (drained, rinsed)
  • 1 (15.25oz) can whole kernel corn (drained)
  • 2 medium onions, chopped (about 1 1/2 cups)
  • 2 medium Roma tomatoes, chopped (about 1 cup)
  • 1 cup chopped red and green bell pepper (about 1/2 of each pepper)

Ingredients

Directions

In large bowl, beat lime juice, olive oil and vinegar with wire whisk until blended. Whisk in chipotle chilies, cumin and cilantro. Stir in all remaining ingredients; mix until well-coated. Season to taste with salt and pepper.

Serving Suggestions: Serve this colorful salsa with chips, or use it to top nachos or tacos.
If you like avocado, top the salsa with chopped fresh avocado just before serving.
