Ingredients

  • 2 slices bacon, chopped
  • 1 (15.5oz) can S&W® White Beans (drained, rinsed), divided
  • 1 (15oz) can mixed vegetables (drained), divided
  • 2 & 3/4 cups 50% less sodium fat-free beef broth, divided (from 1-quart carton)
  • 1/2 cup uncooked elbow macaroni
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup basil pesto, if desired

Ingredients

  • 2 slices bacon, chopped
  • 1 (15.5oz) can S&W® White Beans (drained, rinsed), divided
  • 1 (15oz) can mixed vegetables (drained), divided
  • 2 & 3/4 cups 50% less sodium fat-free beef broth, divided (from 1-quart carton)
  • 1/2 cup uncooked elbow macaroni
  • 1/2 teaspoon dried Italian seasoning
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup basil pesto, if desired

Directions

In 3-quart saucepan, cook bacon over medium-high heat 5 minutes or until crisp, stirring frequently. With slotted spoon, remove bacon to paper towel to drain. Meanwhile, combine 1 cup of the beans, 1 cup of the vegetables and 1/4 cup of the broth in food processor. Cover; process 20 seconds or until smooth. Set aside.

Add remaining broth and macaroni to saucepan. Bring to a boil. Cook 6 to 8 minutes or until macaroni is tender. Stir in pureed mixture, remaining beans and vegetables and Italian seasoning. Cook until thoroughly heated. Top each serving with bacon, cheese and a spoonful of pesto if desired.

Tip: You can use any small pasta for this quick hearty soup.
You can also substitute 1 cup of frozen mixed vegetables in place of one can of mixed vegetables.
