Directions

Heat oven to 375° F. In 12-inch skillet, cook ground turkey and onion over medium-high heat, 6 to 8 minutes, until meat is thoroughly cooked. Stir in beans, corn, garlic powder and cumin; spoon mixture into 7×11-inch (2 quart) baking dish. Prepare muffin batter as directed on package; stir in cheese. Drop spoonfuls of batter over meat mixture; spread to cover mixture. Bake 15 to 20 minutes, until toothpick inserted comes out clean.

Tip: You could also use a 9-inch square baking dish or shallow casserole dish to bake this casserole.

Serving Suggestion: Serve with a green leafy salad to make a complete meal.
